This cask-strength release is a celebration of Scotland’s first documented whisky distillation in 1494, and the monk who made it all happen — Friar John Cor. Six centuries on, this release channels that spirit of innovation and honour into a whisky that’s as rich in story as it is in flavour.
Expertly crafted from a marriage of ex-Bourbon barrels, Amontillado, and Pedro Ximénez Sherry butts, Chapter III delivers a deep, layered complexity. After maturation, the component whiskies were vatted and rested in refill sherry butts, allowing time for every element to integrate and harmonise, bringing elegance and cohesion to this robust dram.
Nose: Rich fruitcake, orange oil, toasted almonds, old leather and a touch of brine
Palate: Waves of sherried sweetness — dates, fig jam, hazelnut praline — balanced with dry spice, roasted coffee beans, and a silky bourbon warmth
Finish: Long and warming, with dark chocolate, leather, a touch of oak smoke and treacle
