This Kilchoman Maury Cask Matured is a limited edition release from Kilchoman Distillery has been matured entirely in ex-Maury fortified wine casks from the Roussillon region of southern France.
Made from Grenache Noir grapes, Maury wine is renowned for its deep sweetness and rich dried-fruit character, which brings a distinctive depth to Kilchoman’s naturally smoky spirit.
Full maturation in these casks creates a beautifully balanced whisky, where notes of dark fruits, honeyed sweetness and warming spice complement the distillery’s signature peat smoke and bright citrus character.
Rich aromas of figs, raisins and dates lead the way, layered with salted caramel, orange peel and gentle peat smoke. The palate develops into notes of pipe smoke and dark chocolate with treacle sweetness and warming spices, before finishing with lingering dried fruits, cacao, earthy peat smoke and a soft, dry spice.
About the distillery:
Founded in 2005, Kilchoman Distillery is one of the few independently owned distilleries on Islay. Known for its traditional farm distillery approach, Kilchoman carries out every stage of production on site — from growing barley and malting to distilling and maturation — producing distinctive single malts that combine bright citrus sweetness with classic Islay peat smoke.
