From the heart of Fife comes a whisky crafted with precision, patience, and authenticity. Daftmill is no ordinary distillery—it’s a working farm, owned and operated by the Cuthbert family. Producing whisky only in the farm’s quieter months—mid-summer and winter—this boutique operation is the definition of small-batch. With as few as 100 casks produced per year, every Daftmill release is a true rarity, and this 15-year-old is no exception.
The barley used to craft this Lowland single malt comes straight from the family’s South fields. The variety, Optic, is a classic in Scotch whisky production, known for its exceptional malting properties. Distilled in June, July, or August of 2009, this release is a time capsule of the care and tradition that define Daftmill.
Twenty carefully selected casks went into this bottling: 19 first-fill bourbon barrels and one exceptional ex-PX cask. The whisky has spent its life maturing in the cool, stable environment of Warehouse 2, with its lower level providing the perfect conditions for slow, steady aging. After 15 years of patient maturation, it was bottled in December 2024 at the traditional Fife strength, capturing the essence of the region’s whisky heritage.
Expect a nose that dances with orchard fruits, honey, and soft floral notes, leading into a silky palate of ripe apples, vanilla, and gentle spices, with a whisper of sherry sweetness from the PX influence. The finish is long, warming, and exquisitely balanced—a testament to the craftsmanship behind every bottle.

Daftmill is a small, family-run distillery nestled on a farm in Fife, within the Pitlair Estate. Located in the lush valley of the River Eden in Collessie Parish, the farm cultivates the barley used to craft their exceptional whisky. The distillery's debut bottling came in 2018, and since then, two new releases have been introduced each year. Due to limited production and overwhelming demand, these bottles are rare and highly sought after by collectors. The whisky itself is smooth, with a malty, fruity profile, and consistent notes of vanilla and toffee that shine through in every release.
