The Villalta Valpolicella Ripasso utilizes grapes sourced from carefully chosen hillside slopes within the Valpolicella region. Known predominantly for its mild to cool continental climate influenced by Lake Garda and the Adriatic Sea. Harvested at the end of September, this wine embodies the rich terroir of its region.
Firstly, the process involves de-stemming the grapes and fermenting them at 26-28 °C for about 8-10 days. Before it is followed up by racking and fermentation. Initially, the winemaker ages the wine in stainless steel tanks before exposing it to Amarone skins for approximately 5-7 days. After racking and gently pressing, the winemaker then transfers a portion of the wine into barriques for several months.
The Villalta Valpolicella Ripasso 2020 features a deep red color and offers a rich, complex bouquet with scents of cherry. On the palate, it is smooth and elegant, with aromas of dark chocolate and roasted nuts. This wine pairs well with red meats, game, stews, and full flavoured mature cheeses.
