Height of Arrows is gin inspired by how Holyrood Distillery makes whisky. Whisky’s vast array of flavours rely on distillers’ expertise in using just three ingredients, water, malted barley and yeast.
In creating Height of Arrows they sought to create gins that followed the same principle of utilising a few ingredients to achieve an abundance of flavours. They have focused production on gin’s essential botanical, juniper, with each iteration using Juniper in a different way.
Height of Arrows showcases Juniper’s complex flavours, while additions of Isle of Skye sea salt and natural beeswax, marry with juniper to impart a further depth of flavour and beautiful texture...

"Roasting spices has long been known to add more complex flavours in cooking. For our Heavy recipe we have roasted juniper, extracting more flavour to build a robust juniper heavy expression of Height of Arrows. By sweetning Heavy in the Old Tom style we have achieved a gin that is powerful yet beautifully balanced."

Elegant nose of white blossom,citrus and vanilla. Palate reveals more vanilla and a hint of spicy juniper. Finish is subtly spicy.
