Following fermentation and precise column still distillation, the rum is further refined with locally sourced spring water. The journey continues as the Rum is matured in ex-bourbon and ex-Rioja barrels for seven years, guided by the island's hot and humid climate, which imparts that iconic Don Papa flavour. Only the finest casks are expertly blended, resulting in a luxuriously rich and velvety rum, a true testament to the artistry of nature and the skilled hands that guide its creation.
